Ingredients for 1 servings:
- 2 eggs
- 2 tbsp cream, skimmed
- 1 tbsp sorrel or chives, chopped
- 1 tbsp oil (thistle oil)
- 50 g dried meat or ham, sliced or diced
- 100 g potatoes, boiled, cold, sliced
- 40 g Cheddar cheese, medium-aged, grated (Tilsiter also tastes good)
- 1 small onion(s) or shallot
- 1 gherkin(s) if required

Working time approx. 15 minutes; Total time approx. 15 minutes
Grandma’s egg dish
Whisk the eggs with the cream, sorrel or chives, and cheese. Heat the oil in a pan and fry the jerked beef, ham, or bacon until crispy. Remove the jerked beef and fry the potatoes in the pan with the fat and onions until golden brown. Add the egg mixture and sprinkle with the bacon. Once the omelet is cooked on one side, flip it over and cook the other side. Serve immediately, garnished with a pickle if desired. Seasoning isn’t usually necessary. Serve with a coffee—some might think of Grandma.
