Ingredients for 2 servings:

  • 250 g potatoes
  • 200 g minced meat
  • 1 large onion(s)
  • 1 Pepper
  • 1 can tomatoes, chopped
  • 100 g cherry tomatoes
  • 200 g feta cheese
  • 2 bay leaves
  • salt and pepper
  • some parsley
  • some oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Peel the potatoes, cut into bite-sized cubes, and cook until tender. Chop the onion, pepper, and parsley, and quarter the tomatoes. Then fry the minced meat in a little oil. Add the onion and pepper and fry briefly, then fry the diced potatoes briefly. Add the canned tomatoes, cherry tomatoes, and bay leaves, heat everything briefly, and then sauté over medium heat for about 10 minutes. Season with salt and pepper. Finally, add the chopped parsley. Divide the mixture between two greased baking dishes and crumble the feta over the top. Bake in a preheated oven (200°C top/bottom heat, 180°C fan-assisted) for about 15-20 minutes.
