Ingredients for 4 servings:
- 500 g minced meat
- 3 large potatoes
- 1 red bell pepper(s)
- 1 can of corn
- 1 can of tomatoes, chopped
- salt and pepper
- Paprika powder
- Cayenne pepper
- Garlic oil, if not available, garlic powder
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes
Peel and dice the potatoes, trim and dice the bell peppers. Brown the minced meat in a little oil in a pan and season with the spices mentioned above. Add the potatoes, bell peppers, and corn. Add the tomatoes, enough water to cover, and bring the stew to a boil. Season to taste and adjust seasoning if necessary. Simmer for about 30 minutes, until the potatoes are tender. Serve with either garlic baguette or buttered garlic toast.
