Fasolia – Lebanese bean stew

Ingredients for 2 servings:

  • 260 g white beans (1 small can)
  • 260 g kidney beans (1 small can)
  • 2 cloves garlic
  • 400 g tomatoes, chopped
  • 3 tbsp tomato paste
  • ½ tsp harissa
  • ½ tsp cumin powder
  • ½ tsp cinnamon
  • tsp salt and pepper
  • Oil for frying
  • Coriander greens, chopped, optional

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

Drain both beans in a colander. Meanwhile, finely chop the garlic. Heat the oil in a pan over medium heat. Sauté the chopped garlic. Then add the tomato paste and harissa paste and sauté for about 2 minutes. Add the chopped tomatoes, followed by the drained beans. Season with cumin, cinnamon, salt, and pepper and simmer over medium heat for about 30 minutes. If you like, sprinkle chopped coriander over the dish before serving.
