Green bean soup with potatoes and kohlrabi

Ingredients for 4 servings:

  • 500 g green beans
  • 2 large potatoes
  • 1 kohlrabi
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tbsp parsley, chopped
  • 1 tbsp chives
  • 1 tbsp dill
  • salt and pepper
  • 2 liters of water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Wash the beans and cut into small pieces. Peel the potatoes and kohlrabi and also cut into small pieces. Heat the olive oil in a saucepan and add the beans, potatoes, and kohlrabi. Add the tomato paste, parsley, chives, and dill and sauté for 5 minutes. Pour in 2 liters of water and bring to a boil. Add salt and pepper and simmer for 20 minutes. Season to taste and garnish with fresh parsley or chives, if desired. Approx. 150 kcal per serving.
