Ingredients for 1 servings:
- 150 g flour (wheat flour)
- 350 g flour (dark rye flour)
- 1 ½ tsp salt
- 1 pinch(s) of sugar
- ½ cube of yeast, fresh
- 400 ml water, lukewarm
- 6 tbsp pumpkin seeds
- 5 tbsp mixed grains
- some butter, for the mold (silicone loaf mold 25 cm)
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes
Seeded mixed bread, my favorite
Crumble the yeast into the water with a pinch of sugar. Place the flour in a sealed mixing bowl, add the salt and the dissolved yeast. Knead for 6 minutes with a mixer. Then add the seeds and knead for another 4 minutes. Place the lid on the bowl and let it rise for 45 minutes (you can put the bowl in a warm water bath for this, but it’s not necessary). Lightly grease the baking pan and pour in the dough. Now make a few cuts in the top with a knife. Bake for 45 minutes at approx. 200°C. If you like a nice crust, you can brush the top with a little water 5 minutes before the end of the baking time and continue baking at 220°C for the remaining 5 minutes.
