Ingredients for 1 servings:
- 120 g flour, whole grain
- ½ tsp salt
- 40 g butter, cold
- 5 tbsp water, cold
- a little oil for the molds
- 6 tsp hazelnuts, ground
- 400 g cherry(s), pitted
- ½ large banana(s), mashed
- 1 dl coconut milk
- 1 tbsp honey
Instructions

Wholesome cherry tart without eggs, makes 6 pieces
Mix the flour and salt in a bowl. Cut the cold butter into small pieces and rub it into the flour until it forms a crumbly mixture. Make a well, add the water, and quickly knead into a dough. Chill for 30 minutes. Brush 6 baking dishes with a little oil and set aside. Preheat the oven to 250°C (top/bottom heat). Roll out the dough to a thickness of 3 mm, cut out circles, and line the baking dishes. Prick the dough several times with a fork. Place 1 teaspoon of ground hazelnuts on the bottom of each dish, top with the cherries, and bake in the lower half of the oven for 15 minutes. For the glaze, heat the coconut milk and honey in a small pan until the honey has dissolved. Mash the banana with a fork and add it to the honey-coconut milk. Remove the cherry tarts from the oven, spread the glaze over the tarts, and bake for another 15 minutes. Remove from the oven, let cool, serve with yogurt, crème fraîche, or whipped cream, if desired, and enjoy.
