Ingredients for 6 servings:
- 200 ml water
- 150 g sugar
- ½ bulb(s) of fennel
- 1 tbsp anise
- 1 lime(s), the juice
- 1 tbsp syrup (glucose syrup)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Boil the sugar and water (simple syrup), finely dice the fennel and add it, along with the anise. Simmer until the fennel is soft, then blend thoroughly. Simmer for a bit longer, strain. Add the lime juice and glucose syrup, and let cool. Transfer to an ice cream maker and freeze.
