Ingredients for 4 servings:
- 3 large fennel bulbs or 4 small ones
- 2 tbsp olive oil
- 1 tbsp honey
- ½ tsp white pepper
- 2 pinches of salt
- ½ tsp Italian herbs, dried
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Trim the green parts from the fennel bulbs (reserve for decoration) and most of the stems. Cut the bulbs into quarters or sixths depending on their size, and remove as much of the tough core as possible, but do so in a way that the pieces do not fall apart. Place the bulbs in a freezer bag with the spices, honey, and olive oil and mix well. Transfer from the bag to a shallow oven dish and bake in the oven at approximately 200°C (top/bottom heat) for 40-45 minutes. Stir 2-3 times to ensure everything browns evenly and cooks. Sprinkle with some finely torn fennel greens before serving.
