Summery cucumber salad with curry-apple sauce

Ingredients for 4 servings:

  • 2 cucumbers
  • 1 apple
  • ½ small can of corn
  • 1 bell pepper(s), red
  • 1 small onion(s)
  • 150 g cheese (Oldenburger Burlander 45%), in thick slices
  • 100 g low-fat yogurt
  • 100 ml apple juice
  • 1 tsp curry

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the onions and bell peppers. Peel and halve the cucumbers, remove the seeds, and slice the flesh. Dice the cheese. Place everything in a bowl and add the corn. For the dressing, grate the apple and mix with the apple juice, yogurt, and curry powder until smooth. Add the dressing to the salad and toss everything well.
