Slice the cucumber very thinly (this works best with a special grater). Dissolve the sugar in the vinegar and add the dill. Pour this mixture over the cucumbers and stir well. Refrigerate overnight. Wash the cauliflower, cut it into florets, and cook it in the vegetable broth (takes 12 minutes). After 5 minutes, add the steaks to the hot pan and fry to taste. Season with salt and pepper. Halve the pears and scoop out the cores with a teaspoon. Place the pears in a microwave-safe dish (with a lid) skin-down and place a walnut in the center (in the scratched-out hole). Microwave the pears at 600W for 5-6 minutes. Finely slice the tomatoes and arrange on plates. Add the cucumber salad, cauliflower, steaks, and pears. Sprinkle everything with frozen parsley (or frozen chives if desired) and serve with light hollandaise sauce.
