Festive roast turkey

Ingredients for 4 servings:

  • 1 kg turkey breast
  • Salt and pepper, freshly ground
  • 1 pinch of cinnamon
  • 1 tsp sugar
  • 1 m.-sized onion(s)
  • 2 apples, sour
  • 1 tsp curry powder
  • some cider
  • 1 tsp vegetable stock powder
  • 250 ml cream

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 45 minutes

Turkey breast with apples and cider

Clean the turkey breast and pat dry, season with salt, pepper, and curry powder. Mix the sugar with the cinnamon and sprinkle over the turkey breast. Brown it in a roasting pan or deep pot until crispy. Peel and dice the onion. Cut the unpeeled apples into eighths and remove the cores. Add both to the turkey roast and sauté briefly. Then deglaze everything with cider (the amount of cider depends on the amount of sauce you want). Cover the roasting pan or pot and let the whole thing simmer over medium heat for about 1 hour. Add the stock powder and pour in 250 ml of cream. Season the sauce again if desired and thicken if necessary. Tip: Dumplings and apple-flavored red cabbage go best with this.
