Ingredients for 4 servings:

  • 3 medium-sized cucumbers (about 500g)
  • 1 tomato(s)
  • 60 g bacon, cut into small cubes
  • 1 onion(s)
  • some salt
  • 1 tbsp cornstarch (slightly heaped)
  • 1 tbsp water
  • 1 tbsp lemon juice
  • some sugar
  • 1 tbsp parsley
  • some dill or chervil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut a small piece off the ends of the cucumbers and taste for bitterness. If so, cut off enough to taste. Peel and halve the cucumbers, scrape out the cores with a spoon, and cut them into 2-3 cm wide pieces. Peel the tomatoes and cut them into small pieces. Fry the bacon on level 3. Briefly heat the cucumbers, tomatoes, and diced onions in the pan (remove the bacon cracklings first!). Add the water and a little salt, and simmer the cucumbers for 15-20 minutes on level 1 until tender (immediately reduce to level 0 for tender cucumbers). Bind the vegetables with the cornstarch, season with salt, lemon juice, and sugar, and sprinkle with the herbs and the cracklings.
