Ingredients for 2 servings:
- 150 g rice
- 250 g leaf spinach, frozen
- 250 g cocktail tomatoes
- 200 g feta cheese
- 250 ml vegetable stock
- 1 tsp paprika powder
- 1 tsp herbs de Provence
- ½ tsp salt
- ½ tsp pepper

Working time approx. 5 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 45 minutes
as a side dish or main course
Preheat the oven to 180°C fan/convection oven. Place the rice, spinach, tomatoes, and feta in a baking dish and pour over the vegetable stock. Place the baking dish in the preheated oven for 40 minutes. Turn the feta block over once about halfway through the baking time. Remove the baking dish from the oven and season the contents with paprika, salt, pepper, and Provençal herbs. Stir thoroughly with a fork until all the ingredients are well combined.
