Feta cheese with vegetables

Ingredients for 3 servings:

  • 2 handfuls of cocktail tomatoes
  • 1 red bell pepper
  • ½ half fennel
  • 1 zucchini
  • 1 onion(s)
  • 1 onion(s), red
  • 1 feta cheese
  • 10 tsp cream cheese, natural
  • 1 clove(s) garlic, squeezed
  • 7 stalks thyme, fresh
  • 1 handful of Parmesan cheese, whole
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp sweet paprika
  • 1 tsp chicken broth or soup seasoning
  • 10 dashes olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Preheat oven to 200°C fan/convection oven. Quarter the cherry tomatoes. Dice the bell peppers, fennel, zucchini, and feta. Transfer everything to a baking dish. Slice the onions into half rings, press the garlic, and mix. Season with fresh thyme, spices, and olive oil. Finally, spread the cream cheese on top and finely grate the Parmesan cheese. Bake in the oven for about 45 minutes. Herb butter baguette goes perfectly with it.
