Ingredients for 2 servings:
- 2 slice(s) of feta cheese, approx. 150 g each
- some pepper, freshly ground
- 4 leaves basil, fresh
- 1 sprig(s) of oregano, fresh
- 2 shallots
- some olive oil
- 2 slices of farmhouse bread
- ½ bunch parsley, fresh
Instructions

on delicious farmer’s bread
Preheat the oven to 200°C top/bottom heat, 180°C fan/gas mark 3. Season the feta cheese well with pepper on both sides. Finely chop the basil and oregano. Peel the shallots and cut into fine cubes. Mix the herbs and shallots together, roll the cheese in them and press the mixture down well. Brush two sufficiently large sheets of baking paper with a little olive oil and place the cheese pieces on top. Drizzle with a little oil, fold the paper over the cheese slices and seal well. Place the parcels with the paper seam down on the baking tray and bake in the oven for 10 to 15 minutes until the cheese begins to melt. Check that the cheese is soft by pressing gently. Toast the slices of bread until golden brown and drizzle with a few drops of olive oil. Roughly chop the parsley. Sprinkle the bread slices with the chopped parsley. Remove the cheese from the paper and arrange on the bread. Serve immediately.
