Feta meatballs with white beans

Ingredients for 4 servings:

  • 500 g minced beef
  • 1 egg(s)
  • 4 tbsp almond flour
  • 2 tbsp Ajvar, spicy
  • salt and pepper
  • 100 g feta cheese
  • 1 tsp olive oil
  • 1 onion(s)
  • 2 garlic cloves
  • 2 cans of large white beans, 250g drained weight each
  • 250 g cherry tomatoes
  • 100 g arugula
  • ½ organic lemon(s)
  • 1 tsp olive oil
  • 1 tsp thyme, dried

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Low-carb

Knead the ground beef, egg, almond flour, ajvar, 1/2 teaspoon salt, and pepper. Form the mixture into 8 equal-sized meatballs. Divide the feta cheese into 8 pieces and place them in the center of the meatballs. Close the ground beef over the meatballs. Peel and finely dice the onion and garlic. Drain the beans. Wash and halve the tomatoes. Grate the lemon zest. Squeeze the lemon halves. Heat oil in a pan and fry the meatballs for 6 minutes on each side. Heat oil in a pot and briefly sauté the onion and garlic. Add the thyme and beans, then add the tomatoes and a little water. Season with salt and pepper and sauté for 3-4 minutes. Season the beans with salt, pepper, and lemon. Stir in the arugula. Tip: For fewer carbs, use green beans. 520 kcal per serving.
