Ingredients for 4 servings:

  • 2 large carrots
  • 1 large zucchini
  • 1 onion(s)
  • 60 g feta cheese
  • 25 g flour
  • ¼ tsp cumin
  • ½ tsp poppy seeds
  • 1 tsp curry powder, medium hot
  • 1 tbsp parsley, freshly chopped
  • 1 egg(s)
  • 25 g butter
  • 2 tbsp vegetable oil
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Coarsely grate the carrots, zucchini, onion, and feta. Combine the flour, cumin, poppy seeds, curry, and parsley and season with salt and pepper. Add the carrot mixture, stir in the beaten egg, and mix well. Heat the butter and oil in a heavy-based pan. Add a spoonful of the carrot mixture, flatten, and fry for about 2 minutes on each side. Drain briefly on kitchen paper and serve hot.
