Feuervogel's Remoulade Sauce

Ingredients for 4 servings:

  • 2 m.-sized onion(s)
  • 1 large apple
  • 5 gherkins
  • 1 bunch of flat-leaf parsley
  • 2 tbsp mayonnaise, homemade or ready-made product
  • 1 tbsp yogurt
  • ½ tsp mustard, medium hot
  • Salt and pepper, from the mill

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

own sauce creation for fish, roast beef and cold roast

Peel the onions, peel the apple, and core it. Roughly chop the onions, apple, and gherkin. Wash the parsley and shake it dry thoroughly. Remove the stalks and roughly chop. Place in a food processor/hand blender/blender/food processor and chop very finely, but do not puree. Mix the mayonnaise with the yogurt and mustard and season with salt and pepper. Stir the blended ingredients into the mayonnaise, season again, and let it sit for 30 minutes or longer.
