Ingredients for 4 servings:
- 2 stalk(s) leeks
- 1 large onion(s)
- 4 garlic cloves
- 1 bunch of basil, dried will also work
- 2 can/n tomatoes, peeled (approx. 400g each)
- 1 tbsp vegetable broth, granulated
- ¼ tsp chili powder
- 1 tbsp tomato paste
- oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Clean the leek and slice it into rings, along with the onion and garlic. Heat oil in a pan and briefly fry the leek, onion, and garlic, then sauté with a little water. Then add the two cans of peeled tomatoes, the vegetable stock powder, chili, tomato paste, and basil, and top up with about two cans of tomatoes. Puree the whole thing with a hand blender, heat gently, and bring to a boil briefly. Variations: If you like, you can add 1/8 liter of coconut milk, or finely chopped tofu cubes fried in oil, or even fine soup noodles and finely chopped fried vegetables (carrots, zucchini).
