Fig chutney made from fresh figs

Ingredients for 3 servings:

  • 500 g onion(s)
  • 500 g fig(s), fresh
  • 250 g sugar
  • 250 ml red wine, dry
  • 1 lemon(s), untreated, zest
  • 15 ml balsamic vinegar
  • Cinnamon powder
  • Allspice d’Espelette

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Peel the onions, halve them, and slice them thinly. Quarter the figs. Caramelize the julienne onions with the sugar in a large saucepan. Add the figs and deglaze with the red wine. Season to taste with lemon zest, vinegar, cinnamon, and piment d’Espelette pepper. Simmer the chutney over low heat, stirring constantly, until it reaches the desired consistency. Pour into twist-off jars while still hot and seal immediately. If desired, you can also preserve it for longer.
