Ingredients for 1 servings:

  • 2 kg fig(s)
  • 1 kg gelling sugar 2:1
  • 2 shots of bitter lemon with vodka
  • 1 lemon(s), juice
  • 20 g ginger, grated
  • ½ tsp cinnamon powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 16 minutes

Peel and wash the figs, and cut them into small pieces. Combine the sugar, vodka-lemon juice, lemon juice, freshly grated ginger, and cinnamon with the figs and bring to a boil in a large pot. Boil gently for about 5 minutes. Purée the fruit with a hand blender. Bring everything back to a boil briefly, pour into jars, and seal.
