Filled almond stars

Ingredients for 30 servings:

  • 125 g butter
  • 100 g powdered sugar
  • 180 g flour
  • 1 egg(s)
  • 70 g cornstarch
  • 100 g almond(s), ground
  • 1 tsp cinnamon
  • 2 tsp vanilla sugar
  • 1 pinch of salt
  • 1 lemon(s), grated peel
  • 150 g powdered sugar
  • 3 tbsp eggnog

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix together the butter, powdered sugar, vanilla sugar, lemon zest, salt, and egg. Mix the flour with the cornstarch and knead in with the almonds and cinnamon. Wrap the dough in foil and chill for about 30 minutes. Roll out the dough to about 5 mm thick; this works best between cling film. Cut out stars. Cut out a circle in the center of half of the stars. Place the stars on baking sheets lined with baking paper and bake at 180°C (160°C fan-assisted oven) for 8-10 minutes. Let cool. Dust the cookies with the circle with a little powdered sugar. Make a thick glaze from the remaining powdered sugar and the egg liqueur. Spread this mixture over all the stars and place a cut-out cookie on top of each one. Let it set. If you don’t like egg liqueur, you can also fill the cookies with nougat or jelly (e.g., blackcurrant jelly).
