Filled baguette with zucchini and tomatoes

Ingredients for 4 servings:

  • 1 baguette(s)
  • 2 m.-large zucchini
  • 6 slices of breakfast bacon
  • 3 m.-sized tomato(s), sliced
  • e.g. salt and pepper
  • a little oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Cut the zucchini in half and fry briefly in a little oil, season with salt and pepper. Add the bacon and fry briefly. Cut the baguette in half lengthwise and hollow it out. Place half of the sliced ​​tomatoes on the bottom half of the baguette. Place half of the bacon on the tomatoes and then the zucchini on top. Add the remaining bacon and then the remaining tomatoes. Now cover the baguette with the top half of the baguette, tie it together with kitchen string and brush with oil. Bake in the oven at 200°C (top/bottom heat) for about 50 minutes. Cover the baguette with aluminum foil halfway through the cooking time.
