Vegan rice with almond milk

Ingredients for 4 servings:

  • 1 liter almond milk (almond drink)
  • 40 g whole cane sugar
  • 1 pinch of salt
  • 1 star anise
  • ½ vanilla pod(s)
  • 180 g rice pudding
  • n. B. cinnamon sugar, fruit of your choice or apple compote

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

quick and easy, also tastes good to children

Bring the almond milk to a boil with sugar and all the spices. Add the rice and let it simmer over very low heat for about 45 minutes. Stir occasionally to prevent sticking. Ladle into plates or bowls and serve with cinnamon sugar and/or fruit. We like to serve it with apple compote. The rice is delicious hot or cold.
