Ingredients for 1 servings:
- 160 g butter, soft
- 160 g powdered sugar
- 1 packet of vanilla sugar
- 1 pack of flavoring, orange peel flavor (Finessa)
- 1 bottle of flavoring oil, orange flavor
- 1 large egg(s)
- 350 g plain wheat flour (type 480)
- ½ tsp baking powder
- 80 g jelly, orange marmalade or jam
- 125 g chocolate coating, whole milk
Instructions
Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes
simple cookies with jam and chocolate icing, for about 60 pieces
This amount is enough for about 60 cookies. Mix the first 6 ingredients with a mixer until creamy, then stir in a little flour and baking powder and knead. Leave to rest in the refrigerator in cling film for about 1 hour. Roll out the dough in 2 portions on floured baking paper to a thickness of about 3mm – also cover the dough with baking paper. Using a small round cookie cutter, approx. 3 to 3.5 cm, cut out cookies and place them on a baking sheet lined with baking paper. Bake in an oven preheated to 175°C (top/bottom heat) for about 12 minutes – check on them, they should only be very lightly browned (they will continue to brown on the hot tray!). If you want to do it quickly and the appearance is not so important, you can also shape the dough into approx. 2.5 cm thick rolls and cut approx. 3mm thick slices and bake them like that – but then leave a little more space between them, as they will spread out a little but will not be thinner. I always use leftover dough like this: Combine the cooled cookies with a little orange jelly or jam (I like to stir in a little orange-flavored oil, which you can also use from the dough). Carefully melt the chocolate coating in a warm water bath and spread a thin layer on one side of the cookies.
