Pasta with spicy bean and tomato sauce

Ingredients for 3 servings:

  • 400 g tomatoes
  • 300 g beans, green
  • 6 Pepper , (Jalapenos) hot
  • 3 tbsp tomato paste
  • 250 ml vegetable stock
  • 2 onions
  • 2 cloves garlic
  • olive oil
  • Herbs of Provence
  • Thyme
  • rosemary
  • pepper
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Finely dice the onions and garlic. De-string and halve the beans. Dice the tomatoes. Halve the jalapenos and slice them into thin strips. Heat the olive oil in a pan and sauté the onions and garlic. Add the tomato paste and stir in. Then add the chopped tomatoes, beans, and jalapenos and sauté everything for about 5 minutes over medium heat. Then add the stock and season with salt, pepper, and herbs. Simmer the whole thing over low heat for about 20 minutes. Serve with any type of pasta.
