Fillet steak with herb topping

Ingredients for 4 servings:

  • 4 steaks (fillet steaks)
  • 2 tbsp clarified butter
  • salt and pepper
  • 1 onion(s)
  • 4 slices of toast
  • 50 g herbs, mixed, chopped
  • 1 egg(s)
  • 100 g cheese, grated (Gouda)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the meat and pat dry. Season with pepper. Brown on both sides in hot clarified butter, then season with salt and place on a baking sheet. Preheat the oven to 200°C (400°F). Peel and chop the onion, and sauté in the fat. Dice the white bread and add it to the onions along with the herbs, egg, and cheese. Season with salt and pepper. Spread the mixture over the steaks and bake for 10 minutes.
