Filo Dough / Yufka – Dough

The perfect filo dough / yufka – dough recipe with a picture and simple step-by-step instructions.

  • 300 g Flour
  • 3 tbsp Olive oil
  • Salt
  • 50 ml Water
  1. Put the flour in a pile on the work surface and make a well. Put in the salt and oil and mix carefully. Slowly add water and knead until a smooth dough is formed that does not stick to the work surface (kneading time approx. 7-8 min).
  2. Shape the dough into a ball and let it rest for at least 30 minutes.
  3. Sprinkle the work surface with flour and roll out the dough very thinly (until the pattern of the work surface can be seen).
  4. Once rolled out, the dough should be processed immediately as it dries very easily. Do you have to prepare a filling, brush the dough with a little water or put a damp cloth over it !!
  5. To freeze, place the dough on baking paper and roll it up.
