Finchen's Strawberry-Lime Sorbet

Ingredients for 6 servings:

  • 800 g strawberries, peeled and weighed
  • 4 limes, juice of which
  • 50 g glucose
  • 200 ml syrup (cane sugar syrup)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 45 minutes

Fruity fresh

Blend all ingredients with an immersion blender until smooth and place in the ice cream maker for 40 minutes. This will create a semi-solid sorbet, ready to eat. If you prefer a firmer consistency, place the sorbet mixture in a shallow container and freeze for about half an hour.
