Fine mirabelle plum jam with vanilla

Ingredients for 10 servings:

  • 2 kg mirabelle plums
  • 1 kg sugar
  • 1 vanilla pod(s)
  • 150 ml apple juice

Instructions

Working time approx. 1 hour 30 minutes; Total time approx. 1 hour 30 minutes

Ideal for children

Wash the mirabelle plums, remove the stones, and remove any bad spots. Then cut into small pieces. Split the vanilla pod and scrape out the seeds. Bring to a boil in a covered saucepan with the sugar, vanilla seeds, pod, and apple juice. Simmer over low heat for 60 minutes. Then remove the vanilla pod and puree it with a hand blender. Pour the puree into hot, rinsed jars while still hot and let it cool upside down. The puree will keep for a few months if stored in a cool, dark place.
