Ingredients
 

  • 800 g Potatoes
  • 60 g Melted butter
  • 60 g Spring onion
  • 3 tablespoon Cream
  • 100 g Creme fraiche Cheese
  • 100 g Sea salt
  • Pepper from the grinder

Instructions
 

  • Boil the potatoes in plenty of salted water until they are soft - then drain the water - "quench" the potatoes with very cold water (then they are easier to peel)
  • heat the butter until it is liquid - cut the spring onion (only use the green part) into small rolls - mix the cream, creme fraiche spring onion and liquid butter in a bowl - season with salt and pepper
  • add the hot potatoes and mash with a potato masher or fork - mix everything well and season to taste again - place in a serving ring on the plate and decorate with spring onion rolls
