Ingredients
- 800 g Potatoes
- 60 g Melted butter
- 60 g Spring onion
- 3 tablespoon Cream
- 100 g Creme fraiche Cheese
- 100 g Sea salt
- Pepper from the grinder
Instructions
- Boil the potatoes in plenty of salted water until they are soft - then drain the water - "quench" the potatoes with very cold water (then they are easier to peel)
- heat the butter until it is liquid - cut the spring onion (only use the green part) into small rolls - mix the cream, creme fraiche spring onion and liquid butter in a bowl - season with salt and pepper
- add the hot potatoes and mash with a potato masher or fork - mix everything well and season to taste again - place in a serving ring on the plate and decorate with spring onion rolls
