Fine tomato soup

Ingredients for 1 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 tsp vegetable oil
  • 2 tsp tomato paste
  • 100 g tomatoes, peeled from the can
  • ½ tsp rosemary
  • ½ small jar red wine, dry
  • 150 ml vegetable stock
  • 1 pinch(s) of sugar
  • 1 tsp lemon juice
  • salt and pepper
  • 1 tbsp Parmesan, freshly grated (32% fat)

Finely chop the onion and garlic clove. Heat the oil in a saucepan and sauté both until translucent. Add the tomato paste and fry briefly, then add the tomatoes and rosemary. Pour in the red wine and vegetable stock, bring to a boil, and simmer for about 5 minutes while stirring. Season the tomato soup with sugar, lemon juice, salt, and pepper. Sprinkle with Parmesan cheese and serve. Preparation time: about 5 minutes; cooking time: about 10 minutes.
