Finely spiced potato salad

Ingredients for 3 servings:

  • 500 g potatoes
  • 1 onion(s)
  • 1 apple, green
  • 2 gherkins
  • 100 ml vegetable stock
  • 2 tbsp oil
  • 100 g mayonnaise (yogurt mayonnaise or other)
  • 1 tbsp chives, in rolls

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the potatoes in their jacket potatoes. Let them cool, peel them, and cut them into chunks. Peel and finely chop the onion. Heat the oil and fry the onion until translucent. Combine the vegetable stock, mayonnaise, and chives in a salad bowl. Peel and skin the apple, then dice them. Mix them immediately with the dressing in the bowl to prevent them from browning. Finely dice the cucumber. Mix them with the potatoes and onions in the dressing. Let it marinate in the refrigerator for a few hours before serving.
