Grated potato salad (Swabian)

Ingredients for 2 servings:

  • 5 jacket potatoes from the previous day
  • 1 onion(s)
  • 4 tbsp oil
  • 2 tbsp vinegar
  • 1 tbsp Maggi
  • 1 tsp mustard, medium hot
  • 1 tsp salt
  • 1 pinch(s) of pepper

Swabian potato salad variant made from jacket potatoes

Peel the cold potatoes and grate them with a grater (the grater I use has holes with a diameter of just under 2 mm). Mix the salad dressing in a separate bowl from the vinegar, oil, Maggi, mustard, salt, and pepper. Mix well, then pour over the grated potatoes and fold in evenly. Let the salad sit for about 30 minutes. Stir occasionally and season with salt and pepper if necessary. It’s suitable as a side dish for any dish that would also serve with a regular potato salad. Quick and easy to prepare, it tastes great, and is always a hit. Note: This special type of potato salad is a “leftovers-use” recipe… true to the Swabian motto: “Nothing goes to waste.” Tip: You should really use jacket potatoes from the day before for this recipe, or perhaps boil them the day before, as this will affect the flavor.
