Finnish blueberry cake with kermaviili

Ingredients for 1 servings:

  • 150 g butter
  • 100 g sugar
  • 1 egg(s)
  • 150 g wheat flour type 405
  • 150 g wheat bran (graham flour), alternatively type 405
  • 1 tsp baking powder
  • 50 g sugar
  • 200 g Skyr or Kermaviili, alternatively Quark
  • 1 egg(s)
  • 1 tsp vanilla sugar
  • 500 g blueberries, cleaned
  • Fat for the mold

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Make a batter from butter, 100g sugar, 1 egg, the flour, and the baking powder. Pour it into a shallow, greased cake pan or a 28cm tart pan. In a bowl, mix Kermaviili (the Finnish product) or Skyr (may be more readily available) or Quark (quark), 50g sugar, 1 egg, vanilla sugar, and blueberries. Pour it onto the batter in the cake pan. Bake the cake in a preheated oven at 200°C for approximately 30 to 40 minutes.
