Ingredients for 4 servings:

  • 750 g fish fillet(s) (e.g. cod, haddock, etc.)
  • 2 rolls, stale, soaked
  • 2 small eggs
  • 1 tbsp bacon, diced
  • 1 onion(s)
  • ½ bunch parsley, chopped
  • Salt and pepper, white
  • Paprika powder, sweet
  • Nutmeg, ground
  • 3 tbsp oil
  • lemon juice

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

Drizzle the fish fillet with lemon juice and place in the freezer for 30 minutes. Then grind the cold fish fillet through the fine disk of a meat grinder. Squeeze the breadcrumbs and grind them with the onion. Mix the fish mixture with the breadcrumbs, eggs, bacon, parsley, and seasoning. Season well to taste! Form into rolls or patties and grill them either on an oiled grill rack or in a pan. Brush with oil frequently while grilling.
