Ingredients for 1 servings:
- 2 ½ kg flour
- 300 g yeast
- 750 ml milk
- 4 pts vanilla sugar
- 2 lemon(s), grated peel
- 35 g salt
- 300 g fat (pork fat) or butter
- 1 kg clarified butter
- 100 g bitter almonds, ground (possibly from a pharmacy or health food store)
- 500 g almond(s), sweet, ground
- 150 g candied lemon
- 850 g sugar
- e.g. melted butter for spreading
- n. B. Powdered sugar for sprinkling
Instructions
Working time approx. 1 hour; Rest time approx. 3 hours; Cooking/baking time approx. 1 hour; Total time approx. 5 hours
All ingredients should be stored in a warm room at least overnight to ensure they are at the same temperature. Make a well in the sifted flour and mix the yeast with a small amount of lukewarm milk into it to form a medium-firm starter dough. After it has risen, add the sugar, spices, all the fat, almonds, and milk as needed, and form a dough. It is very important that the dough is kneaded thoroughly. Keep it warm and let it rise for at least 3 hours. However, do not leave it too warm, as this will cause the fat to escape. Then punch down the dough again and divide it into 1.5 kg pieces, shape it into stollen, and place it on prepared baking sheets. Let it rise without further further, then bake at medium heat (approx. 175-180°C top/bottom heat) for approx. 60 minutes. In the order shown: butter, sugar, butter, sprinkle with powdered sugar, and store tightly wrapped. After a week, you can already taste it!
