Fish fillet baked with tomatoes

Ingredients for 4 servings:

  • 4 fish fillets
  • 4 tomatoes, peeled, pitted and diced
  • 1 small onion(s), finely chopped
  • 1 clove(s) garlic, peeled
  • salt and pepper
  • Herbs, mixed and chopped
  • Breadcrumbs
  • Fat for the mold
  • possibly grated cheese, if required

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Sauté the onion, add the tomatoes, press in the garlic clove, and season to taste. Stir in the breadcrumbs. If desired, you can also stir in some cheese. Place the fillets in a greased baking dish and spread with the tomato mixture. Bake in a preheated oven at 200-225°C for approximately 30-40 minutes.
