Ingredients for 2 servings:
- 2 cod fillets or hake fillets, approx. 300 g
- 2 small beefsteak tomatoes
- 1 m.-sized onion(s), sliced
- 1 tbsp clarified butter
- 1 tbsp, heaped tomato paste
- 1 tbsp spiced ketchup
- ½ tsp salt
- 1 tsp, leveled stock powder
- lots of pepper
- lots of basil
- 1 tbsp flour for binding
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Melt the butter, stir in the tomato paste, stock powder, and ketchup. Add the sliced onions and sauté. Finely dice the tomatoes, peeling them first if necessary, and add them. Place the washed, salted, and marinated fish on top. Let it simmer in a covered pan for about 7 minutes. Season the sauce with salt and pepper and thicken with 1 tablespoon of cold flour if it seems too runny. Serve with rice as a side dish.
