Fish fillet on tomato and onion ragout

Ingredients for 2 servings:

  • 2 cod fillets or hake fillets, approx. 300 g
  • 2 small beefsteak tomatoes
  • 1 m.-sized onion(s), sliced
  • 1 tbsp clarified butter
  • 1 tbsp, heaped tomato paste
  • 1 tbsp spiced ketchup
  • ½ tsp salt
  • 1 tsp, leveled stock powder
  • lots of pepper
  • lots of basil
  • 1 tbsp flour for binding

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Melt the butter, stir in the tomato paste, stock powder, and ketchup. Add the sliced ​​onions and sauté. Finely dice the tomatoes, peeling them first if necessary, and add them. Place the washed, salted, and marinated fish on top. Let it simmer in a covered pan for about 7 minutes. Season the sauce with salt and pepper and thicken with 1 tablespoon of cold flour if it seems too runny. Serve with rice as a side dish.
