Fish fillet with walnut crust

Ingredients for 2 servings:

  • 2 fish fillets, e.g. pollock, cod or similar
  • salt and pepper
  • 2 tbsp lemon juice
  • 10 walnut kernels, finely chopped
  • 2 tbsp Parmesan, grated
  • 1 tbsp butter, softened
  • 1 tbsp lemon zest, grated
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Drizzle the fish fillet with lemon juice and set aside. Marinate for about 1 hour. Turn on the oven and preheat to 180°C (top and bottom heat). Combine softened butter, chopped walnuts, chopped parsley, lemon zest, and grated Parmesan cheese, and season with salt and pepper. Dry the fish fillets and season on all sides with salt and pepper. Then spread the walnut mixture on each fish fillet and bake in the oven for 10-15 minutes. Serve with croquettes, buttered peas, and a glass of Chablis.
