Ingredients for 5 servings:

  • 1 kg fish fillet(s) (carp, plaice, zander)
  • 1 cup peas
  • 1 can of asparagus
  • 50 g cheese, grated
  • 200 ml whipped cream
  • Parsley
  • salt and pepper
  • lemon juice
  • Flour
  • oil
  • butter
  • Seasoning

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

very fine, light fish dish with asparagus

Season the fish fillets with lemon juice, season with salt and pepper, and let stand for 1/2 hour. Coat the fillets in flour and sear in a little oil. Remove from the pan and keep warm. Melt a little butter in the remaining pan drippings and dust with flour. Sauté until lightly browned, then deglaze with cream and the juice from the asparagus can, stirring continuously. Season to taste with salt, lemon juice, and stock. Stir the peas, grated cheese, and chopped parsley into the sauce. Layer the fish fillets in a baking dish, place the asparagus spears on top, pour over the sauce, and bake in the oven at 170°C for about 20 minutes. If desired, you can sprinkle grated cheese on top before baking.
