Fish in green sauce

Ingredients for 4 servings:

  • 800 g fish fillet(s)
  • lemon juice
  • salt and pepper
  • 60 g margarine
  • 80 g flour
  • 375 ml water
  • 375 ml sour cream
  • dill
  • Parsley
  • chives

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 17 minutes; Total time approx. 32 minutes

Clean the fish thoroughly and cut into portions. Then add salt and pepper. For the sauce, heat the fat, add the flour, and sauté gently, stirring constantly. Deglaze with an equal mixture of sour cream and water, stirring constantly, then bring back to a boil. Add the fish to the boiling sauce and cook for about 15-20 minutes. Add the chopped herbs and season with lemon juice, salt, and pepper. Note that the sauce should initially be very thick, as the fish will still release liquid. Wine or egg yolk are suitable for refining the sauce. Boiled potatoes and a pepper and tomato salad are suitable side dishes.
