Fish – Involtini

Ingredients for 4 servings:

  • 4 redfish fillets, boneless
  • 2 sprigs rosemary
  • 4 slices of ham (Serrano ham)
  • some salt and pepper
  • 1 tbsp olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the redfish fillets, pat dry, and cut them in half lengthwise. Place the torn rosemary on half of these fillets. Fold the fillets together. Halve the Serrano ham lengthwise (or a whole slice, depending on the size). Wrap the ham around the folded fish fillets and secure with toothpicks. Heat the olive oil in a nonstick pan and fry the involtini on both sides. Season with salt and pepper as desired. Serve with a tomato risotto.
