Ingredients for 2 servings:
- 250 g redfish fillet(s), possibly also pollock
- 100 g ham, diced
- 50 g onion(s)
- 250 ml cream
- 1 bunch of parsley
- 50 ml Metaxa
- Tomato paste
- pepper
- 30 g Parmesan, freshly grated
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Redfish in a delicious bed
Dice the onions and ham. Sauté for 5 minutes and let cool. Place the fish in a greased casserole dish. Mix the Metaxa with the tomato paste. Brush the fish thickly with the tomato paste and Metaxa and season with pepper. Spread the ham, onions, and parsley over the fish. Sprinkle with Parmesan cheese until well coated. Pour over the cream. Bake in the oven at 225°C for 30 minutes. Serve with a dry white wine.
