Ingredients for 2 servings:
- 250 g tomatoes
- 1 onion(s)
- 1 clove(s) garlic
- 100 g mushrooms
- 2 fish fillets of your choice (e.g. redfish, cod)
- 1 tbsp lemon juice concentrate
- e.g. salt and pepper
- ½ tsp oregano
- 1 tsp oil
- 75 g sour cream
- e.g. basil, fresh

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Finely chop the onions, press the garlic, and sauté both in a pan with oil. Add the oregano. Finely chop the tomatoes and mushrooms and add them. Sauté the vegetables for about 2 minutes over high heat, season with salt and pepper, and transfer to a baking dish. Drizzle the fish fillets with lemon juice and season with salt and pepper. Place the fish on top of the vegetables and spread with the sour cream. Cover and cook for 20 minutes in a preheated oven at 200°C (top/bottom heat). Garnish with basil.
