Rösti corners topped with salmon and spinach

Ingredients for 4 servings:

  • 6 Rösti (fried potato wedges), frozen
  • 250 g leaf spinach, frozen
  • 200 g mushrooms, fresh
  • 200 ml cream
  • 1 onion(s)
  • 2 garlic cloves
  • 250 g salmon fillet(s), frozen
  • Cheese, grated
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Pre-cook the hash browns at 175 degrees Celsius (350 degrees Fahrenheit) for about 10 minutes. In the meantime, squeeze the thawed spinach leaves dry. Sauté the diced onion and sliced ​​mushrooms in hot oil. Just before the end, add the crushed garlic cloves. Top with the cream and bring to a boil briefly. Stir in the spinach. Season with salt and pepper. Line a greased baking dish with the hash browns. Place the thawed salmon slices on top of the hash browns. Sprinkle with the spinach mixture. Sprinkle with grated cheese and cook for about 20 minutes at 175 degrees Celsius (350 degrees Fahrenheit). The hash browns will naturally get soggy, but in my opinion, this doesn’t detract from the flavor.
