Ingredients for 4 servings:

  • 3 onions, peeled, diced
  • 1 tbsp lard
  • 500 g potatoes, peeled, diced
  • 1 tbsp spice mix (cucumber pickling spice), contains bay leaves, peppercorns, mustard seeds, cloves
  • 250 ml water
  • 1 tsp, leveled salt
  • 1 jar beetroot, diced
  • 5 fish fillets (matjes fillets)
  • 2 gherkins (vinegar), diced
  • 4 eggs

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Matjeshering – potato dish, children’s version of Labskaus

Brown the onions in lard in a pot. Add the potatoes. Add the pickle seasoning and salt, pour in the water, and cook until tender. Drain the remaining water and stir in the beets (you can also buy the ready-cooked version from the vegetable counter) and the chopped herring fillets into the potatoes. Place the cucumbers on top. Fry the eggs until fried, then place one on each serving plate.
