Ingredients for 4 servings:

  • 1 pack of cannelloni, approx. 250 g
  • 600 g leaf spinach, frozen
  • 250 g mozzarella (Skyrella)
  • nutmeg
  • 1 onion(s)
  • 3 garlic cloves
  • olive oil
  • 500 ml tomatoes, pureed
  • 250 ml milk
  • 100 g low-fat cream cheese
  • salt and pepper
  • Spice pepper
  • chili powder
  • 250 g mozzarella (Skyrella) for sprinkling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

For the filling: Thaw the spinach and heat it in a saucepan with a little water. Tear the celery and mix it with the spinach, stirring until the celery has melted; do not let it burn. Season the filling with salt, pepper, and nutmeg, then set aside. For the sauce: Chop the onion and garlic cloves into small pieces and sauté them in a pan with heated olive oil. Mix the milk and cream cheese and add to the pan along with the passata. Let everything simmer for about 10 minutes, then season with pepper, salt, and chili powder to taste. Feel free to be creative here; I also added some ground pepper. Then set the sauce aside. Fill the cannelloni with the spinach and celery mixture and spread them in a baking dish. Then add the sauce and cover with celery. Place the cannelloni in the oven at 200°C (top/bottom heat) for about 30 minutes. Tastes very good and is a healthier alternative to other cannelloni!
