Fitness scrambled eggs with avocado

Ingredients for 2 servings:

  • ½ avocado(s)
  • 4 slices of toast
  • 2 tbsp herb cream cheese
  • 4 eggs
  • 1 pinch(s) of salt and pepper
  • chili flakes
  • 1 tbsp butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

First, whisk the eggs in a bowl with salt and pepper. Add butter to the pan and set the stove to medium heat. Heat the toast in the toaster. Hollow out 1/2 an avocado and cut it into small pieces. You won’t need the other half; leaving the pit in will prevent it from browning as quickly. Add the eggs to the pan and after 2 minutes, use a wooden spoon to push the scrambled eggs from the edges to the center and wait until they set, then repeat. If the scrambled eggs are still a little lumpy, remove from the heat as they will continue to cook. Spread the toast with cream cheese and top with the avocado pieces, and season lightly with salt. Arrange the toast on a plate, top with the scrambled eggs, and sprinkle with chili flakes. 450 kcal per serving.
